Banana Muffins

Ingredients:

  • 1 1/2 cups all purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 large bananas (mashed)

  • 3/4 cup white sugar

  • 1 egg

  • 1/3 cups butter (room temperature)


What to do:

  1. Preheat the oven to 350°F.

  2. Either put cupcake liners or oil in the muffin pan.

  3. Sift together, flour, baking powder, baking soda and salt.

  4. In a different bowl, combine bananas, sugar, egg and butter.

  5. Fold in the flour mixture to banana mixture and mix till smooth.

  6. Put about a spoonful of batter into the muffin pan.

  7. Bake for 10-15 minutes for mini muffins and 25-30 for big muffins.

  8. Let cool and enjoy.


Chocolate chip cookies

Ingredients:

  • 3/4 cup unsalted butter (room temperature)

  • 3/4 cup brown sugar

  • 1/4 cup white sugar

  • 1 egg

  • 2 teaspoon vanilla extract

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup chocolate chips


What to do:

  1. In a mixer with the paddle attachment beat butter, brown sugar and white sugar for about 2 minutes.

  2. Beat in egg and vanilla extract

  3. In a separate bowl combine flour, baking soda and salt.

  4. Add the dry ingredients to the wet ingredients.

  5. Beat on low till combined.

  6. Fold in chocolate chips.

  7. Make small disks with dough and cover with plastic wrap.

  8. Chill in the fridge for 1 hour to 2 days.

  9. Once chilled allow to become room temperature before continuing.

  10. Preheat the oven to 350°F.

  11. Make little balls around 1 inch big and place on a pan lined with parchment paper. Make sure to space apart about 2 inches.

  12. Bake for 10-12 minutes, till golden brown.

  13. Let cool and enjoy.


Sugar Cookies

Ingredients:

  • For the cookies

    • 1 cup unsalted butter (room temperature)

    • 1 cup white sugar

    • 3 large eggs

    • 1 1/2 teaspoon vanilla extract

    • 1/2 teaspoon salt

    • 3 1/4 all purpose flour

  • For icing

    • 2 cups powdered sugar

    • 1 egg white

    • 3 tablespoons water


What to do for the cookies:

  1. In a mixer, beat together the butter and sugar until fluffy.

  2. Add eggs, vanilla extract and salt.

  3. Slowly add the flour (dough will become sticky).

  4. Divide the dough into 4 equal parts, cover in plastic wrap and chill overnight.

  5. Let dough come to room temperature.

  6. Preheat the oven to 400°F.

  7. On a floured surface roll dough to about 1/3 inch and cut into desired shapes.

  8. Place cut outs on a baking sheet lined with parchment paper.

  9. Bake for 12 minutes or until lightly golden.

  10. Cool completely.


What to do for the icing:

  1. With a mixer on low, blend sugar, egg white and water for 12 minutes.

  2. Decorate chilled cookies however you desire.
